Tzatziki - vegan option

Ingredients:
- 1 cucumber
- 1.5 tsp fleur de sel
- 2-4 cloves of garlic, to taste
- 400 g Greek yogurt (10% fat) *vegan option soy or almond yogurt
- 1 tsp juice and a little zest of an organic lemon
- 3 tbsp sour cream *vegan option cashew or soy-based
- a little olive oil to drizzle on top
- 1 cucumber
- 1.5 tsp fleur de sel
- 2-4 cloves of garlic, to taste
- 400 g Greek yogurt (10% fat) *vegan option soy or almond yogurt
- 1 tsp juice and a little zest of an organic lemon
- 3 tbsp sour cream *vegan option cashew or soy-based
- a little olive oil to drizzle on top
Preparation:
Peel the cucumber, cut in half lengthwise and remove the seeds with the help of a teaspoon. Then shave into fine strips on a grater, place in a colander and hang over a bowl to drain.
Salt the cucumber slices, mix well and leave to drain for approx. 10 minutes.
Squeeze the garlic into a bowl and add the yogurt, sour cream, lemon, pepper and salt.
Then squeeze out the cucumber pieces well, add and season to taste.
Garnish with olives or a few more cucumber slices if desired. Drizzle with a little olive oil before serving.
