Low carb pizza with cauliflower base

Preparation time: 60 minutes - Difficulty level: easy

Ingredients for 2 low-carb pizzas with a diameter of approx. 25-30 cm:
- 1 medium cauliflower
- 1 red onion
- 2 garlic cloves
- 3 tbsp olive oil
- 1 tin of chopped pizza tomatoes
- 4 fresh vine tomatoes
- 200 g grated cheese, we used medium aged Gouda
- 1-2 buffalo mozzarella - to taste
- 2 spring onions
- fleur de sel, freshly ground pepper
- oregano
Topping:
- 2 spring onions, 2 tbsp basil pesto or fresh basil leaves

Pizza with cauliflower base, low carb

Preparation:

Remove the outer leaves from the cauliflower, clean and remove the stalk, cut into large sprouts and blanch in boiling salted water for 4 mins.

Then drain in a sieve and rinse briefly with cold water.

Now coarsely grate the cauliflower into a bowl - either using a hand grater or a food processor - mix in the grated cheese thoroughly and season the mixture with fleur & pepper to taste.

Spread half of the cauliflower mixture on a baking tray lined with baking paper in a nice round shape and press down with a tablespoon, you can press the edges firmly all around with the back of a knife.

Of course, you can also use a pizza base mold.

Now place your cauliflower base in the preheated oven for 10 minutes to pre-bake.

During the baking time, you can form the second base and prepare the tomato sauce.

To do this, peel and finely dice the onion and garlic, heat the olive oil in a medium saucepan and sauté the diced onion and garlic until translucent, stirring constantly.

Then add the canned tomato pieces, stir everything well and simmer for about 4 minutes, don't forget to stir in between, season with salt, pepper, sugar and oregano if necessary.

For the rest of the topping, wash and slice the fresh tomatoes, drain the mozzarella and cut or tear into slices and finely slice the spring onions.

After pre-baking your cauliflower bases, spread the tomato sauce evenly over them, top with the fresh tomatoes, mozzarella and spring onions and bake the topped pizza for a further 12 minutes at the same temperature.

Top the whole thing with basil pesto or fresh leaves before serving. And voilà, your delicious homemade low-carb pizza is ready.
