Elderflower syrup with honey
Preparation time: 20 minutes to 3 days :) - Difficulty level: easy
- 20-30 cones of elderflowers (harvest at the top, not near the ground)
- 2kg sugar alternatively honey
- 2 L water
- 1 organic lemon
- 1 teaspoon dried yarrow
- 1 large pot with lid
- 1 sieve
- 1 thin tea towel
- empty bottles (boiled)
Preparation:
Place the sugar and water in a large pan and boil the mixture for 4-5 minutes.
Grate the lemon peel and cut the lemon into slices.
Shake out the flowers to make sure there are no insects on the flowers.
(Alternatively, the flowers can also be rinsed, but some of the flavor will be lost)
Add the flowers and lemon to the sugar syrup and leave the mixture in a cool, dark place for 2-3 days.
After 3 days, filter the syrup through a sieve lined with a thin tea towel and bring to the boil briefly.
Now you can pour the syrup into the prepared bottles and seal tightly.
Tip: The elderflower syrup is ideal for blue lemonade.
Simply add 2-4 tsp of our blue spirulina extract to one liter of syrup before bottling it hot.
