Date waffles with cherry honey & almond cream

Preparation time: 30 minutes - Difficulty level: easy
- 130 g wholemeal spelt flour or *gluten-free flour
- 90 g buckwheat flour
- 8 g baking powder
- zest of ½ organic citrus fruit of your choice
- 4 tbsp raw cane sugar
- ½ tsp ground vanilla, cinnamon
- 1 pinch of fleur de sel
- 10-12 soft dates without stone
- 3 eggs
- 1 large apple
- 300 ml almond or oat drink
- 20 g almond yoghurt
- 20 g nut butter
- 20 g coconut oil and a little for frying
Topping:
- 4 tbsp cherry honey
- 200 ml vegan cream
- 2 tbsp flaked or slivered almonds
- sugar snow as required
Preparation of waffles:
Mix the spelt flour, buckwheat flour, baking powder, citrus zest to taste, spices and sea salt in a bowl.
Place the dates together with the eggs, almond drink, yogurt, nut butter and coconut oil in a high-speed blender and blend until smooth.
Add the flour mixture at low speed and mix just until all the ingredients are just combined.
Leave the batter to rest for 5-10 minutes before baking.
Preheat the waffle iron to a medium temperature, grease lightly if necessary, add the batter in batches and bake one waffle at a time until lightly browned.
Topping:
Whip the cream with a hand mixer, toast the flaked almonds in a frying pan, place the waffles on plates, spread a dollop of cream on top, drizzle 1 tbsp of cherry honey over each, dust with flaked almonds and, if desired, powdered snow and serve.
