Coconut-mango lassi with flower pollen, turmeric & goji berries
Preparation time: approx. 20 min - Degree of difficulty: easy
Ingredients for 2 Lassi:
- 1 ripe mango
- 150 ml cold coconut milk
- 100 g cold coconut yoghurt
- 1 pinch of ground turmeric
- 1/2 organic lime
Ingredients topping per glass:
- 1 tbsp flower pollen
- 1 tbsp goji berries
- 1 slice fresh mango
- 1 slice fresh lime
- 1 ripe mango
- 150 ml cold coconut milk
- 100 g cold coconut yoghurt
- 1 pinch of ground turmeric
- 1/2 organic lime
Ingredients topping per glass:
- 1 tbsp flower pollen
- 1 tbsp goji berries
- 1 slice fresh mango
- 1 slice fresh lime
Preparation:
Peel the mango, cut the flesh from the core and place in a food processor or strong blender.
Blend with coconut milk, yoghurt, turmeric and squeezed lime juice until smooth and creamy.
Divide smoothie between two glasses and garnish with toppings.
Ice cold a pleasure and a great summer refreshment.
