Chia almond cinnamon stars

Preparation time: 60 minutes - Difficulty level: easy
- 4 tbsp chia seeds
- 10-12 tbsp warm water
- 375 g roasted and ground almonds
- 60 g maple syrup
- 4 tbsp raw cane sugar
- 4 tsp cinnamon
- 1 pinch sea salt
- 2 tsp bourbon vanilla sugar
- For the icing:
- 60 g powdered sugar and 1 tbsp water or plant-based drink
Preparation:
Briefly grind the chia seeds in a food processor or electric coffee grinder, mix with the warm water and leave to swell.
In the meantime, mix the roasted and ground almonds with the maple syrup, sugar, salt, cinnamon and vanilla sugar, add the chia jelly and mix everything by hand to form a smooth dough.
If the dough is too dry, add a little more warm water.
On a lightly floured work surface or between 2 sheets of baking paper, roll out a smooth dough, not too thin and not too thick.
Cut out the stars and place them on a baking tray lined with baking paper with a little space between them.
Bake the cookies for about 15 minutes and then leave to cool completely on a wire rack.
Mix the powdered sugar and water/vegetable drink to make a glaze and brush the stars with it. Leave the icing to set.
