Our sea buckthorn jam confection is handmade with love in a small Latvian family business.
The Baltic and Scandinavian countries are known for their berry richness.
Thus, many berries such as sea buckthorn, blueberries and prune berries grow naturally wild here or are cultivated as vitamin-rich food like the gooseberry or currant.
In their small manufactory, Livija and her husband Pēteris produce a unique-tasting fruit confection from these wonderful fruits.
After many years of trial and error, the two managed to find the perfect recipe, which provides a good balance between taste, cut resistance and shelf life.
The sea buckthorn confection consists of 80% sea buckthorn, 18% sugar and 2% pectin.
It thus represents the perfect combination of aromatic sea buckthorn flavor and pleasantly soft bite strength.
Over time, the natural fructose in the confection begins to crystallize, similar to the crystallization that occurs in honey. This is a natural process and does not represent a quality defect. Also the fine aroma does not suffer from this.
