The beguiling scent of lime blossoms bursting with nectar and pollen can be smelled for several hundred meters on warm summer days. The lime tree is therefore a very special food source for bees and bumblebees. But caterpillars, beetles and other insects can also be found on the various species of lime tree to satisfy their hunger at a rich buffet.
The summer lime tree (Tilia platyphyllos) starts flowering in June and is immediately followed by the winter lime tree (Tilia cordata), which flowers until the end of July, parallel to the silver lime tree.
Attracted by the aromatic scent, bees fly to the lime blossoms in large numbers to collect their nectar, from which they produce an equally aromatic and characteristically tasting lime blossom honey. This tastes somewhat milder than lime honey, which also contains honeydew and is also slightly darker in color compared to lime blossom honey.
Once in the beehive, the lime blossom honey is dried by the bees until a moisture level of around 20% is reached and it can be harvested by the beekeeper.
