- General information about wild garlic:
Wild garlic (Allium ursinum) is a species belonging to the Allium genus and is therefore related to chives, onions and garlic.
This plant species grows in Europe and parts of Asia where it is especially widespread and common in forests. Wild garlic sprouts early and is a much valued wild vegetable that is often picked. Wild Garlic is also known as ramsons, buckrams, wild garlic, broad-leaved garlic, wood garlic, bear leek or bear's garlic.
Wild garlic is a well-known vegetable, spice and medicinal plant. The entire plant is edible, but it is mainly the leaves that are used to make dipping sauces, herb butter and pesto, or as a vegetable in spring dishes.
During the Middle Ages wild garlic was called Herba Salutaris and was used both as medicinal plant and as a food source. It was also believed to ward off bad luck.
